βœ… Make dressing: Combine all the dressing ingredients (oil, lime juice, apple cider vinegar, curry powder, maple syrup, salt, turmeric and garam masala) in a large bowl.β €

INGREDIENTS:
πŸ‘‰ 2 cups pitted California dates (lightly packed)
πŸ‘‰ 1/2 cup shredded coconut
πŸ‘‰ 1 cup walnuts
πŸ‘‰ 2 cups cashews (soaked overnight)
πŸ‘‰ 1/2 cup full fat coconut milk (just the cream)
πŸ‘‰ 1/4 cup maple syrup
πŸ‘‰ 1 tsp vanilla extract
πŸ‘‰ 1/4 cup coconut oil melted
πŸ‘‰ 2 cups strawberries

INSTRUCTIONS:

βœ… Line an 8x8 pan with parchment paper. 

βœ… Add pitted dates, shredded coconut, and walnuts to a food processor. Process together until a dough-like mixture forms. 

βœ… Add the dough mixture to the pan and press until it evenly coats the bottom. It will be sticky so some water on your fingers should help! 

βœ… Place in the freezer while you make the cheesecake filling. 

βœ… Add cashews, coconut milk, maple syrup, vanilla, and coconut oil to a high-speed blender. Blend until completely smooth. If it's too thick to blend well, add some of the coconut milk liquid until it can blend properly. 

βœ… Add about half to the pan and distribute evenly with a spatula. Add the strawberries to the other half of the mixture in the blender and blend again until smooth. 

βœ… Add to the pan and distribute evenly with a spatula. Place in the freezer for 3-4 hours or until completely frozen.

βœ… Once frozen, cut into 16 bars.
