Ingredients

1 cup Fresh Pineapple Chunks

1/4 cup California Dates, finely chopped

4 tsp Whole Grain Mustard

Note:  1 Can (8oz) crushed pineapple in its own juice, lightly drained, can be substituted for fresh chunks.  Omit crushing in blender.

 

Instructions

In container of electric blender, blend pineapple to crush but not puree.  Blend crushed pineapple with dates and mustard.  Can be stored in covered conainer in refrigerator up to 1 week.  Serve at room temperature over grilled or poached fish fillets or chicken pieces.
