Looking for an easy, no-bake Sunday recipe? These Peanut Butter Date Granola Bites are not only easy to make, but the California Dates act to sweeten them, pack fiber, nutrients, and antioxidants to this #healthysnack. 

Peanut Butter California Date Granola Bites 
2 cups California Dates, pitted 
½ cup oats 
1 cup peanuts 
½ cup creamy peanut butter 

1. Add peanuts and oats to blender. Blend until finely chopped. Add dates to blender (in small amounts if necessary), and blend until roughly chopped. Add peanut butter to blender and blend until ingredients are blended together. 

2. Place mixture on piece of parchment paper. Press mixture into rectangle to desired thickness level. Place in refrigerator 30 minutes so the mixture is not as sticky and easier to cut. 

3. Cut into small bars or pieces. Enjoy!

No oven required for these Three Ingredient Brownies. The secret to these #nobakebrownies is the California Dates that act as the sweetener and the binder to hold the brownies together and add extra nutrients to the brownies. 

Three Ingredient Date Brownies 
•	2 cups California Dates, pitted 
•	1 cup almonds 
•	2 tablespoons cocoa powder 

1. Add California Dates to food processor and process until roughly chopped. Remove from food processor and set aside. 
2. Add almonds and cocoa powder to food processor and process until finely ground. Add chopped dates in small amounts back into the food processor. Process until mixture is a dough like consistency. 
3. Place mixture on piece of parchment paper and press together into a rectangular shape, depending on your desired thickness. 

Cut into squares and enjoy!

California Date and Pecan Bundt with Salted Caramel Sauce 🍮
This cake is perfect for an autumn after-dinner treat! It’s rich flavor and texture comes from using fresh California Dates and is delicious served warm with caramel sauce and vanilla ice cream! 😍

18 pitted California Dates
2 cups boiling water
2 tsp + 1 1/2 tsp baking soda
1 cup vegetable oil
1 1/2 cups dark brown sugar
4 large eggs, at room temperature
1⁄4 cup sour cream, room temperature
1 tbsp vanilla extract
3 cups all-purpose flour, plus more for dusting
21⁄2 tsp baking powder
1 tsp sea salt
2-3 tsp cinnamon
1 cup pecans, chopped plus extra for garnish
Salted caramel sauce
Vegetable oil spray, for pan

Preheat the oven to 350°F. Grease and flour a large Bundt pan.
Place the dates into a bowl, pour over the boiling water, and stir in 2 tsp of baking soda. Allow date mixture to soak for 10 minutes, then mash with a fork until smooth. Set aside.

In a large bowl, whisk together the oil, brown sugar, eggs, sour cream, vanilla, and date mixture until well combined.

Sift the flour, baking powder, baking soda, cinnamon and salt into the wet ingredients and blend with an electric mister until smooth. Fold in the pecans.

Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool before inverting onto a wire rack.

Once cool, pour the caramel sauce over the cake and sprinkle on a few pecans for garnish.
