Mediterranean Sauce with Fish

Ingredients
  

  • 1 cup California Dates, chopped
  • 1 1/2 lb firm white fish, cooked, keep warm
  • 1 Onion, chopped
  • 1 tbsp Butter
  • 3 cloves Fresh Ginger, minced or 1/2 tsp Powdered Ginger
  • 1 tsp Cinnamon
  • 1 tsp Cumin
  • 1/4 tsp Pepper
  • 1/8 tsp Cayenne Pepper
  • 1 14 oz. can Tomatoes, diced
  • 1 16 oz. jar Marinara or Chunky Tomato Sauce
  • 1/2 cup Slivered Almonds, toasted
  • 2 tbsp Lemon Juice

Instructions
 

  • In a skillet, cook onion in butter over medium heat until soft. Add garlic and ginger; cook 1 minute. Stir in cumin, cinnamon, salt, pepper and cayenne. Add tomatoes and marinara sauce; cook uncovered over medium heat about 8 minutes or until slightly thickened, stirring occasionally. Add reserved dates, almonds and lemone juice. Simmer 2 minutes. Spoon sauce over fish. Serve immediately. Makes 6 servings.
