Ingredients

Crust

  • 2 cups craham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup butter

Date/Carrot Cake

  • 3/4 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tsp baking soda
  • 1 tsp. cinnamon
  • 1 dash salt
  • 1/2 cup crushed pineapple
  • 1 1/2 cups minced Deglet Noor Dates
  • 1/2 cup grated carrots

Cheesecake

  • 16 oz. cream cheese, room temperature
  • 3/4 cup sugar
  • 1 Tbsp. flour
  • 3 eggs
  • 1 tsp. vanilla

Frosting

  • 8 oz. Cream Cheese
  • 1/4 cup butter
  • 3 cups powdered sugar
  • 1 tsp. vanilla

 

 

Instructions

  1. Mix crust ingredients together.  Bake for 12 minutes at 350 degrees.
  2. Mix together ingredients for Date/Carrot cake.
  3. Spread 1 1/2 cups Date mixture over bottom of crust. 
  4. Drop spoonfuls of 1/2 Cream Cheese mixture.
  5. Repeat with Date mixture and Cream Cheese mixture.
  6. Bake for 45 minutes at 350 degrees.
  7. Mix frosting, cover the cake.
  8. Decorate with date/caramel and Grandma’s Recipe English Toffee crushed.
