Ingredients
Crust
- 2 cups craham cracker crumbs
- 1/4 cup sugar
- 1/4 cup butter
Date/Carrot Cake
- 3/4 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 cup flour
- 1 tsp baking soda
- 1 tsp. cinnamon
- 1 dash salt
- 1/2 cup crushed pineapple
- 1 1/2 cups minced Deglet Noor Dates
- 1/2 cup grated carrots
Cheesecake
- 16 oz. cream cheese, room temperature
- 3/4 cup sugar
- 1 Tbsp. flour
- 3 eggs
- 1 tsp. vanilla
Frosting
- 8 oz. Cream Cheese
- 1/4 cup butter
- 3 cups powdered sugar
- 1 tsp. vanilla
Instructions
- Mix crust ingredients together. Bake for 12 minutes at 350 degrees.
- Mix together ingredients for Date/Carrot cake.
- Spread 1 1/2 cups Date mixture over bottom of crust.
- Drop spoonfuls of 1/2 Cream Cheese mixture.
- Repeat with Date mixture and Cream Cheese mixture.
- Bake for 45 minutes at 350 degrees.
- Mix frosting, cover the cake.
- Decorate with date/caramel and Grandma’s Recipe English Toffee crushed.
