Ingredients
- 2 1.5 inch thick filet mignons
- 1/2 cup finely chopped baby bella mushrooms
- 2 Tbsp. minced shallots
- 2 Tbsp, red wine
- 1 Tbsp. butter
- 4 large pitted dates, chopped
- 1/4 cup crumbled gorgonzola
- 1 egg
- 1 sheet puff pastry, thawed
Instructions
Season steaks to preference. In a very hot skillet, brown steaks. Remove and chill. Meanwhile, in small skillet, combine butter, mushrooms and shallots. Lightly saute until shallots are transluscent. Add chopped dates and red wine. Cover and simmer until dates disolve. Cool completely, then stir in gorgonzola. On a lightly floured surface, roll puff pastry to a 14 inch square. Cut in half. Place 1/2 of date-mushroom mixture in the center of dough, place steak on top. Fold dough up and over steak.
Chill wellingtons 1 hour and up to overnight. In small bowl, whisk egg. Preheat over to 425 degrees. Place wellingtons in non-stick baking pan and brush with egg wash. Bake 20-25 minutes until pastry is golden. May be served with demi glace sauce.
Demi Glace Sauce:
- 2 cups beef stock
- 1/2 red onion
- 1 cup red wine
- 1 Tbsp. butter
- salt & pepper
Combine all ingredients in sauce pan, cooking until reduced by 60% volume. Strain and whisk in butter.
