Date Banana Pudding Parfaits


  • 3/4 cup California dates, pitted and chopped
  • 3.4 oz Vanilla Pudding mix
  • 2 cup 1% Lowfat Milk
  • 1 1/4 cup Plain Lowfat Yogurt
  • 1 Banana, mashed
  • 1 cup Chocolate wafer cookies, crushed
  • California Dates, pitted for garnish
  • Fresh Mint Sprigs, for garnish


  • Whisk together pudding mix, milk and yogurt. Stir in dates and bananas. Layer 1/4 cup pudding in bottom of each of four 8 ounce dessert glasses. Sprinkle 2 Tbsp cookie crumbs on top of each. Layer in another 1/4 cup pudding and another 2 Tbsp cookie crumbs. Tops each with remaining pudding. If desired, garnish with additional dates and mint sprigs just before serving.
