Date Banana Crunch Bread
Ingredients
- 1/2 cup flaked coconut
- 1/4 cup brown sugar
- 1 tbsp butter
- 1 tbsp Flour
Batter
- 1/3 cup cooking oil
- 1/4 cup Sugar
- 1 tsp Vanilla
- 2 Eggs
- 1 cup mashed ripe bananas
- 1 3/4 cup Flour
- 1 1/2 tsp baking soda
- 1 pinch salt
- 1/2 cup walnut pieces
- 3/4 cup chopped dates
Instructions
- Preheat oven to 325 degrees. Grease and 8x4 loaf pan.
- Combine all ingredients for topping. Set aside.
Batter
- Mix oil. sugar, vanilla, eggs, bananas.
- Add flour, baking soda, baking powder, salt, walnuts and dates.
- Pour into prepared pan. Cover with topping.
- Bake in center of oven for 65-75 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan on a rack.
